Commissary Sous Chef at

A Commissary Sous Chef for Conrad Dubai will work closely with the Executive Sous Chef to ensure the smooth running of the commissary, supporting other outlets and banquets, in accordance with the hotel’s standards and financial goals.

What will I be doing?
A Commissary Sous Chef for Conrad Dubai will be responsible for performing the following tasks to the highest standards:

Prepares and updates the departmental operations manuals.
Conducts regular departmental communications briefings and meetings for commissary section.
Checks incoming food products and ensures that all food merchandise is in accordance with order sheets and receiving records.
Coordinates with all satellite kitchens for their mise-en-place and supplies.
Assists to monitor closely the requirements in own section and order the food items at the right time and in the right quantity for the intended use.
Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
Establishes and enforces sanitation standards for the kitchen.
Ensure food items are of a good quality and stored correctly
Ensure the consistent production of high quality food through all hotel food outlets
Ensure resources support the business needs through the effective management of working rotations
Support brand standards through the training and assessment of the team
Lead the kitchen brigade effectively to ensure a well-organized and motivated team
Control costs without compromising standards, improving gross profit margins and other departmental and financial targets
Assist other departments wherever necessary and maintain good working relationships

Previous experience as Sous Chef or strong Junior Sous Chef experience.
Strong knowledge in Commissary.
Passion for producing high quality food and knowledge of current food trends.
Excellent planning and organizing skills.
Ability multi-task and meet deadlines.
Strong supervisory skills.
Positive attitude.
Very good communication and interpersonal skills.
Ability to work under pressure.
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

Previous experience in a luxury hotel.
Locally available to conduct a food tasting.
