Sous Chef – Inniskillin Estate Winery

Job Description

The Sous Chef will act as an assistant manager to the winery Chef and help lead a culinary/kitchen team in developing and executing patio/restaurant, wine and food pairing experiences including special events (weddings, group lunches and dinners). Ensure all dishes are prepared to Arterra standards to showcase our premium VQA wines that align within wineries brand strategy. Assist with offsite catering when required.

Key Responsibilities

  • Execution of food delivery for patio/restaurants and special events
  • Preparation of food ensuring quality, consistency and presentation are meeting all winery and health standards
  • Ensure line cooks and kitchen assistants are preparing food according to standards and adhering to kitchen policies.
  • Off-site catering when required (i.e. Sumac Ridge dinner events, wine club parties etc.
  • Assist Chef as required
  • Perform other related duties and responsibilities as assigned or required

Qualifications

Education

  • Red Seal Certification or equivalent

Experience

  • 3-5 years of professional cooking experience
  • Knowledge of all cooking methods
  • Knowledge and ability to respond to special dietary needs (e.g. vegan, gluten and lactose intolerance)

Qualifications, Certifications Or Designations

  • Food Safe Cert
  • Demonstrated team player and willingness to learn
  • Knowledge of food safe and sanitation plans and practices
  • Knowledge of current culinary trends (e.g. local farm to table) Passion for wine, food and customer
  • Wine and Food Pairing Experience

Supervision

  • Direct:2-4

  • High Stress, fast paced environment with sometimes unpredictable business levels.
  • Kitchen environment can be confining and hot.
  • Standing majority of shift

  • Lots of multitasking
